After polishing and drying your cookware completely, apply a few drops of food-grade mineral oil to a soft cloth and rub it over the entire copper surface in a thin, even layer.

Reapply every few months or after each deep cleaning. The oil seals out moisture and oxygen, slowing the oxidation process that causes discoloration.
