Why does cheese get hard at the edges?

Store cheese in the warmest part of the fridge, usually the vegetable drawer or a top shelf away from the back wall. Extreme cold dries out the surface and kills the beneficial bacteria that give aged cheeses their flavor.

If the edges do harden, trim them off with a clean knife before serving. Keeping cheese between 35 and 45 degrees preserves both texture and taste.
